Food For Thursday


When Kevin and I went through pre-marital counseling, one of our tasks was to divide household chores. Kev received: dishes, finances, trash, bathroom, vehicles and all other duties assigned. =) My responsibilities: Dishes, floors, dusting, laundry, and cooking. This system has worked well for us in our 2.5 years of blissful marriage.

We seem to have taken well to our duties and Kevin hasn't needed much training (good job, Kathy). I, however, have had to become skilled in the art of feeding a man. Kev isn't a picky eater, don't get me wrong. That boy will eat anything I place in front of him and he never complains. (And there have been plenty experiments that have not turned out well.) I have had to learn how to cook for an army, have it taste good, and be nutritious!
One meal I have found that easily fills him up and is super yummy is Stuffed Acorn Squash. I adapted the recipe from Food Mayhem. It is a perfect fall/winter meal, crazy good and super easy!
  • 2 Acorn Squash
  • 2 tablespoon butter
  • 2 teaspoons brown sugar, divided
  • 3 chicken breasts, poached
  • 1 teaspoon olive oil
  • 1 medium sized yellow onion, chopped
  • 2 cloves garlic, chopped
  • 2 teaspoon chili powder
  • 1 teaspoon cumin
  • salt and pepper to taste
Squash
1. Preheat oven to 375 degrees F and wash squash thoroughly.
2. Cut squash in half and scoop out the seeds. Place cut sides down in a dish and fill the dish with 1/2″ of water. Bake for 30 minutes.
3. Remove squash from oven and flip squash over, cut sides up. Put 1/2 tablespoon of butter in each squash half and sprinkle with brown sugar. Bake for another 15 minutes.
Filling
1. While squash is baking, place raw chicken breast in boiling water to poach. This should take about 7-10 minutes or until chicken is cooked all the way through(NO PINK). Once cooked, shred chicken and set aside.
2. Heat a small saute pan with olive oil. Add onions, saute until golden brown and caramelized. (Be sure to use a low heat and be patient. The caramelized onions are worth it!)
3.Add chicken, chili powder, cumin, brown sugar and garlic. Season to taste. Divide filling and load each squash half.
4. Eat and be amazed!!
They are so good, the sweet and salty, mmmm mmmm good!

WIWW- Hello Sun!


The weather in Portland has been fantastic, I mean it.  I think we are experiencing some sort of miracle here in the Northwest.  In the month of December I usually given up on doing my hair, I invest in water proof make-up and I live in my neon green rain jacket and retro-style rain boots.  The last several nights we have seen the sunset and we have seen the sunrise in the mornings. Did you hear me?  We have seen the sun!  This guest appearance usually doesn't happen until at least April, OK I am exaggerating, we usually don't see the sun until May!!  But, we have been lucky enough to see the Sun almost the entire month of December.  Maybe people should think about moving to the Northwest for the winter. Anyways, we Northwesterners have been blessed by the sun so far this winter and I have been able to wear something other then my rain jacket and boots!

Over the river and through the woods to Santa's village we go!  With a dusting of Christmas magic, and singing Christmas carols, the Christmas train brought us to where Santa stays.
The "whoo whoo" of the train whistle started our journey. The train jerked and jolted forward and our journey began.  Our view from the fogged up frosted windows was of dense forest, sparkling rivers, abandoned shacks, quaint cottage,s and an old enchanted tunnel.  The Christmas train smelled of must and rust cookies and snow and we heard off-tune caroles were serenaded by Santa's Elves.  We shivered from the lack of heat excitement to see Santa and anxiously awaited to see his village.
After miles of beautiful country side we arrived to see Santa.  We feasted on cookies and hot cocoa.  We took in the smell of Christmas trees, hoping the scent would follow us home.  We stood by the fire in hopes of thawing our frozen toes and watched all the little boys and girls give Santa their Christmas list. Then we heard the "woo woo" of the train whistle and it was time to leave Santa's Village.
A fun adventure, a funny story, and seriously fun memories we made.  Thanks for my Surprise, B.

Secret Christmas Event


I found "Secret Christmas Event" written on our calendar. These are the hints Kevin has given me about my surprise:
1. Dan and Sarah will be joining us(that list may not be complete).
2. I will not be outside all day.
3. I won't care what I look like unless I take pictures (which I will be).
4. I will meet Santa.

Day of Sitting


Yesterday my day started at 4:15am.  Like two zombies, Kev and I crawled into our iced-over car and drove to Robbie and Pippa’s (they happen to live right next to the MAX lines and we are lucky enough to be able to park in their extra parking spot, thanks guys!).  We grabbed the Red Line and rode the MAX for an hour’s ride to the airport.  Caught a flight to Oakland, and then hopped onto another plane to Ontario.  At the Ontario airport we grabbed a shuttle to the rental car lot and then hopped onto another shuttle to arrive at our sketchy car rental place.  Long story, we are trying to be thrifty.  We hit the road in our fancy shmansy Chevy Aveo and drove an hour north.  I took a quick snooze…
Lovely.  Kev really should have been watching the road instead of taking beauty rest pictures. And we finally arrived at our detour, to meet baby Zoe. 
I was able to get enough cuddles in before we had to get back in the Aveo and face the LA rush hour to meet Kev’s family for dinner.  While sitting in the Friday traffic I learned that Kevin thinks he sings like Josh Groban and I mastered the art of car dancing to pass the time.  How can a day of sitting be so exhausting?  It was all worth it.

Me and...


I thought I would give you a quick snap shot of some of my favorite people.   This by no means is a complete list of my favorite people, they are just the ones that I had pictures of on my phone. I am so lucky to be surrounded by so many amazing people that I thought it would only be fair if I shared some of their goodness!

Bug
Me and the newest addition to my favorite people list. My nephew Christian, or Bug-a-boo as I like to call him.   He is a little over 4 months and a big bundle of cuteness.  Have you ever seen a cuter babe?  I didn’t think so.  In this picture he looks all cute and innocent but it was seconds before he had a huge blow up! He is becoming more aware of his surrounding and he knew I was not his mama, and it was his mama was whom he wanted.  But, somehow, I still want to watch him All. The. Time.

Dad and Dan
Me, my dad and my big bro.  These were my men growing up.  It is weird to see them together lately, my brother is becoming so much like me dad.  This is a very good thing.  You know the kind of people that are good at everything?  Well, Dad and Dan are good at everything, I know, so frustrating.  They are good men.  In this picture we are closely examining a delicious meal we are about read to eat. You can please the three of us very easily with good food.

Katie
Me and my cousin Katie.  How stinking hilarious is this picture?!!  She was a little adorable butterball.  She is even more adorable now and one of my closest friends. She has the gift of enthusiasm. If you ever want someone to be excited for you, call Katie. She makes you feel like you’re worth a million bucks! In this picture I am 3 and she is a year and a half.  I came across it the other day and I loved it so much I took a picture of the picture.

Me and Kev-0. This is my ultimate best buddy.  I don’t think anyone is funnier than this guy (accept for myself, of course).  This guy has the patience of a saint to put up with me. I don’t know how he does it.  Thank you Lord for bringing him to me.  In the picture Kev and I are eating at the Food Carts in Downtown Portland and discovered the best burrito ever made!! Yumm-o!

Linds
Me and my little sister, Linds. She was my all time favorite playmate growing up, poor thing.  I made her play with me all the time, whether she liked it or not. That’s the advantage of being an older sister.  Now, she plays with me by choice, I think. In this picture we were at Casa Naranja in Portland.  It has an amazing patio with hammocks, swings and sand!

Mom
Me and my mama!  This lady is the cream of the crop.  You won’t meet a person with a bigger heart.  I call her at least once a day to talk, whine, or cry.  She gives me swift kicks in the pants and hugs and love when I need them.  She is one of my best friends.  In this picture we were meeting my little bug for the first time. We are now competitors for his attention.

Pip
Me and Pip.  I love this girl, I love her so much I wrote an entire post about her! Pip remembers everything I ever say and is so thoughtful. Not to mention we have a blast together. In this picture we were at Sunday Funday at Chevy’s enjoying guacamole for dinner. (eww, don’t look at my greasy hair!!)

Rachy
Me and my college roomie, Rachy.  In just a few hours I will be landing in Southern California and will be able to see my Crach.  She just became a mommy for the first time about 6 weeks ago.  I can already tell she is going to be a super mom.  She is an incredible listener and loves the Lord. In this picture Rachy and I are at our other college roomie’s wedding.  Joce and Megs are also definitely my favorite people.  I got really lucky with my assigned college roommates, they are my besties now!

Thankful Thursday- Random Thanks


Happy Thursday!  I like Thursdays. they are the day before Friday and the light at the end of the week.  This Thursday will be especially easy as it is my last day in the office for the week.  Kev and I will be headed to California early Friday morning to attend his grandma's funeral and spend time with his family. Making that one of my thankful things for the week!  But wait, there is more!  Here is my five thankful things list for the week!  Random thanks but all good!
1. My black puffer jacket that keeps me, oh so, warm!!
2. The beautiful cloudless December skies.  Don't we live in the Northwest?  Where is the rain?
3.My cousin and crazy fun friend Katie, who I saw Twilight with last night.  I am so addicted to those movies.
4.My early morning Thursday bible study at church!  Don't mind missing a few hours of sleep to be with my discipleship girls!
5. Being able to celebrate the life of Marcella with the entire Erickson clan on Saturday.

I am going crazy today and I am posting twice!  I have a hottie husband with some hottie style (some of it thanks to him, most of it thanks to me!!)
If it was up to Kev-o he would probably wear an old High School T-shirt and jeans everyday.  Or an old High School t-shirt and workout shorts so he could hit the gym whenever he pleases.

WIWW I Have A...


I have a fear.  I fear that I will soon be repeating outfits.  My simple mind can only handle so many creative tasks and I think I am almost to my max!!

I have a confession.  I confess that I may be the most stylish I have ever been in my life.  Keep in mind this isn't saying much.  I think all my stalking on fashion blogs and pinterest is paying off!  See Kev, my time isn't completely wasted! =)

I have a secret.  I secretly wish the style of Adam and Eve stuck so I would have more time to sleep in the morning.

Cure for Crab


Yesterday you could have called me Oscar the Grouch and I would not have objected.  Actually, I would have deserved it.  I tried my best to talk myself into being in a good mood before I got home to greet my hubs. But, just in case I called him on my way home to give him fair warning.

As I walked in the door he swept me up into a tight squeeze. He then relieved my dinner duties by walking me to a restaurant down the block.  Oh yeah, and he made me laugh every 5 seconds.  How does this guy do it? The cure for a crab.
I love trying new restaurants, you could even call it a hobby of mine!  Kev took me to Jo Bar & Rotisserie near our house.  This is how it fared on my Foodie Scale


Foodie Scale
Cleanliness: 4
Taste: 3 all together but the fondue would have been a 5!!!
Service: 3 (our server was so sweet but service was very slow)
Presentation: 3 (looked like something I dished up)
Atmosphere: This atmosphere doesn't get a (+) or (-).  I was very neutral to it.  I didn't love it, but I didn't hate it.  The decor was modern with a rustic twist.  You could see the Chef's working at the stone fire oven.  Bright mural when you first walk in.  Large bar and cozy booths.  Though impressive upon first entering, I think the decor was a bit mismatchy.

Overall rating: 10. I am not sure if i would crave to go back except for the fondue.  But, I am so glad we were able to experience it!

Grumpy McGrumperson


I don't feel like writing today, as a matter of fact, I didn't feel like writing yesterday either.  I am grumpy, oh, and I was grumpy yesterday.  Seems to be a theme here. Everyone has been nice to me, nothing bad happened to me, life is going well... I am just a grump. I realize I am wasting valuable time being in the slumps, but I am grumpy and I just don't care.  I apologize to everyone for my curt sweetness, the edge in my voice, and my efforts to avoid all living beings today.

I will try again tomorrow.

Proud Daughter


PETA activists, may want to skip this post.

Growing up, fall and winter brought venison, quail nuggets, rabbit dinners and summer sausage.  Hunting season was open! It was always fun when my dad pulled into the driveway after being away for several days on a hunt.  Us kids would run to the truck and after searching his hunting pack for candy bars, we would turn our attention to see what he brought home.  The rest of the day turned into a family event helping- well, really watching- my dad prepare the meat he brought home.  As we all gathered in our barn he would tell us stories. He would describe the temperature, the smells, the terrain, the wildlife, and the snoring sounds of his buddies in the tent.  He would give us every detail and allowed us to relive his adventure with him.  We huddled together in the cold barn and prayed. We thanked our Lord for his beautiful creations and how he always provides. Eagerly waiting to get inside and get some dinner; Mom, Dan, Linds and myself would beam proudly as we walked into the house with our dad and provider.

Congratulations, Dad! We are still beaming and proud.  I wish we were there to hit the barn with you this winter!

Thankful Thursday




Happy Thursday, oh and Happy December!! How did we get to this month already? Christmas is coming and I am oh so excited! It is Thursday and today I have many things to be thankful for!

I am thankful for...
1. Spending time with my little bug last night.  (Have you seen the Ben Stiller SNL skit about V-Necks?  Super funny, watch it!)
2. The beautiful sparking frost that covered the city this morning
3. My sweet hubs that scrapped all the crazy thick ice off my car window, brrr!!
4. That there are TWO, count them people, TWO radio stations playing Christmas music 24/7.  Heaven!!
5. The little heater under my desk that keeps my toes and legs so toast!

Can you tell I am in a wintry mood?  Oh life is good!! Tis' the season to be jolly! OK, your turn to think, what are your 5 thankful things?
